Ingredients

  • 2 medium delicata squash, washed, peeled if desired, and cut into medium-thick rings, seeds removed
  • 5–6 Tbsp olive oil, or enough to coat generously
  • 2 tsp hawaj spice blend (for soup)
  • 1 tsp smoked paprika
  • 1½ tsp dried minced garlic
  • Salt and black pepper, to taste

Directions

  1. Preheat the oven to 375°F.
  2. Wash the delicata squash, peel if desired, and slice into medium-thick rings. Remove the seeds from the center of each ring.
  3. Arrange the squash slices in a single layer on a large metal baking sheet.
  4. In a small bowl, combine the olive oil, hawaj, smoked paprika, dried minced garlic, salt, and black pepper.
  5. Pour the seasoned oil over the squash and toss gently until every slice is evenly coated.
  6. Roast at 375°F for approximately 35–40 minutes, checking toward the end for tenderness and caramelization.
  7. Reduce the oven temperature to 350°F and continue roasting for approximately 10 minutes, or until the squash is fork-tender with beautifully golden edges.
  8. Serve warm and enjoy!
